Panch Puran

Panch Puran is an Indian five spice mix also known as Panch phoron  (Hindi: ????????,(Odia: ????? ????)).) Bengali: ???? ????? pãch pho?on), also found transliterated as Padkaune Masala,  panch puran ,  panch phoran,  panchphoran ,[1] panch phutana  (according to wikipedia)

The mix is normally of whole spices and typically made of fenugreek, nigella, cumin, black mustard and fennel.

It is a mainstay of my spice cupboard and often is used fried gently before adding onions to a curry.
